JC SOP: Opening

JC Opening: Approximately 1-2 hours to perform the tasks depending on skill and speed. Time taken to perform the tasks
Objective of Opening: Prep the restaurant for service
Opening Areas:
  • Work from outside in
  • Dining Room (Phase 1)
  • Outside (Phase 2)
  • Bathroom (Phase 3)

Summary task list:
  1. turn light switch
  2. turn on coffee machine & fridge
  3. set up menu stand
  4. sweep floor outside floor
  5. sweep inside floor (dining and bathroom)
  6. clean glass
  7. wipe tables
  8. fill up utensils & serviette
  9. wash hands
  10. wipe cake cabinet. Inside with damp (bleach water) cloth
  11. Wipe outside of cake cabinet with news paper and glass cleaner
  12. remove expired cakes & store them in the back. Inform shift manager number of cakes
  13. top up with new cakes (left new cakes). Shift older cakes to the right.
  14. Clean toilet bowls
  15. clean mirror
  16. wipe down walls
  17. throw away thrash (toilet & side of coffee machine)
  18. light up incense for the zen
  19. turn on ice machine & empty water tray behind ice machine

Make a list and get your cakes from the freezer. Date your cake with today’s date.

Make sure your coffee making paraphernalia is there.

You should have 4 mugs: Steaming mug, cooling mug, hot water mug (for topping up tea), and spare steaming mug. You should also have a single nozzle hock for single shot latte.

Sugar syrup is in the kitchen. If there are none, please make a jug. You ask the kitchen staff to teach you how to make the syrup.
